This one is a riff off of this recipe from food network.com
As always, it’s slightly modified…
ingredients
- 1 C almond flour
- 1/2 c whole wheat flour
- 1/2 c whole wheat pastry flour
- 1 c pumpkin puree
- 1/2 c brown sugar
- 1/2 c regular sugar
- 1/4 c agave syrup
- 1.5 sticks of butter
- 1/2 c mini chocolate chips
- 1/2 c white chocolate chips
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- Preheat oven to 350. Line 2 cookie sheets with parchment and spray with cooking spray.
- Mix butter (softened) and sugar together until creamy.
- Add pumpkin puree and spices
- Combine flours and baking soda and slowly add to the wet mixture
- Add chocolate chips.
- refrigerate for 20-30 mins
- Bake at 350 for 15-20 mins or until golden. will be a little soft (trying to figure out how to make firmer next time)
Never had that combination of a cookie before.
