Crispy Sweet Potatoes

I discovered a trick to really good oven baked sweet potatoes recently. The microwave. Cooking the potatoes first and then crisping them in the oven leads to really good results and in a much shorter amount of time. The microwave dries them out a bit, too.

  1. Preheat your oven to 400.
  2. Chop the sweet potatoes into small pieces. Rub them with olive oil, salt, and a little bit of chilli powder (you can skip if you don’t want them to be spicy).
  3. Microwave them for about 3-4 minutes. You want soft but not mush. 
  4. Throw them onto a baking sheet and roast them off until crispy.
