I grew up with a version of this recipe. It works with kale & chard too. I just happened to have spinach
- 1 bunch of fresh spinach
- 1/2 bunch scallions
- 1/2 yellow or sweet onion
- bell pepper optional
- 1 pita or 1 piece of bread of any kind
- 1 egg
- 1 t garlic paste
- 1-2 oz pepper jack cheese shredded (you can use Parmesan or cheddar too. Pepper jack adds a little kick)
- chilli pepper flakes
- salt & pepper to taste
- Preheat oven to 350
- Sautee onion and green onion until soft. Add spinach and pepper if using.
- Saute until spinach is wilted.
- Transfer to a mixing bowl.
- Chop up bread into small pieces
- Mix up with spinach mixture.
- Add egg, cheese, chilli, salt & pepper.
- The mixture should form into balls. If it releases water, drain out the water.
- bake at 350 until balls hold together, are slightly golden, and the cheese is melted.
